Asafetida is a dried resin like substance obtained from the rhizomes of several species of fetida or giant fennel. This spice is not known much outside India.

Powdered asafetida has a strong, unpleasant smell close to the smell of pickled garlic. The taste is bitter and acrid. However, when fried lightly, it adds wonderful aroma and taste to the food.
