Indian vegetarian cuisine is unsurpassable. It is an art that has developed over the centuries. To be a vegetarian, is not a deprivation in India. One does not miss eating meat, as India has a large variety of vegetarian food preparations to satiate most gourmets. Cooking vegetable is an art in itself. They are braised, steamed, curried or simmered in minimum oil and cooked in their own juices. One such dish is the Pav Bhaji. The favorite dish of Mumbai (Bombay), that is available in most of the fast food restaurants. The vegetables are cooked in butter on a `tava' and served with Pav (bread). Ingredients - Chilly powder, Coriander, Cumin, Fennel, Black Cardamom, Salt, Ginger, Black Pepper, Cloves, Gramdal, Rock Salt, Bay leaves, Cinnamon, Triphal, Mace, Compounded Asafoetida. |
